De Mondion, the Michelin-starred fine dining restaurant at The Xara Palace Relais & Châteaux in Mdina, is seeking a passionate and knowledgeable Junior Sommelier to join its award-winning team. The ideal candidate will play a key role in delivering a world-class dining experience by guiding guests through the restaurant’s curated wine list and creating exceptional wine pairings that complement our contemporary Mediterranean tasting menus.

 

Key Responsibilities

  • Support delivery of high-quality wine and beverage service.
  • Provide expert wine recommendations and pairings aligned with the restaurant’s tasting menus.
  • Deliver professional tableside wine service including presentation, decanting, and proper serving techniques.
  • Educate guests on wine characteristics, regions, vintages, and producers.
  • Collaborate with the culinary team to develop seasonal wine pairings.
  • Ensure compliance with health, safety, and licensing regulations.
