Since opening in 2017, Bàcaro has brought the heart of Venetian dining to the Cayman Islands, blending the charm of Italy with the warmth of island life. Founded by Federico Destro and Barney Bako, Bàcaro was born from a shared love of food, friendship, and authentic hospitality. With a focus on fresh, seasonal and local ingredients and a passion for culinary artistry, the Bàcaro team of chefs, servers, bartenders, and support staff create a dining experience where every meal tells a story and every guest feels at home.
 

  • Curate and maintain an exceptional wine list with a focus on Italian and Old World wines
  • Conduct wine pairings and recommend selections to enhance guests' dining experiences
  • Manage inventory, ordering, and proper storage of wine and spirits
  • Lead wine tastings, staff training, and ongoing wine education
  • Collaborate with chefs to develop pairing menus and seasonal offerings
  • Ensure all service standards are met or exceeded
